Just don't too much pressure on your roller when gluing rubber to the blade, that is how the rubber gets stretched out. Just gently lay the rubber on the blade and press as little pressure as you can, if you put on the glue layers correctly the rubber won't come off.

If you and your wife are serious about playing, I'd say start right from the beginning, get a blade and some rubbers and assemble them yourself. Also, get yourself some new rubbers as well, even if it's not played much it's still a 15 year old rubber... any new rubber these days are better than...
