Has a chopper/defender ever won a major title? Major titles being: World Championships, World Cup and Olympic Games (feel free to include other highly prestigious tournaments).

I know that Joo Se Hyuk came close once with a silver at a World Champs, but I can't think of any who have actually won a major.

Furthermore, do you think that a chopper can ever win a major title?

Yes, most of the WTTC champions were choppers before the 1960s.

The last female player to have won a major singles title is Tong Ling of China at the WTTC 1981.

The last male player to have won a major singles title is Chen Xinhua of China at the World Cup 1985.

The last female player to have won a major team title is Wu Yang of China at the World Team Cup 2013.

The last male player to have won a major team title is Ding Song of China at the WTTC 1995.

Before the p ball came out, wu yang could have won any tournament without Chinese attackers in it!

Viktoria pavlovich won the European champs I believe?

Again basically any title without Chinese attackers in it prior to the p ball could have been secured by a female chopper...

Any time you see a chopper on the podium in any of the 3 majors, count that as a win.

With the ABS ball taking the stage, there has been a re-balancing of styles, where the "speed" component has found its way back into the equation. With that, there has been a resurgence of the fast-attack style and a gradual shift toward speed over spin for the looping style. Unfortunately, the defensive style is hit particularly hard here. Wu Yang has posted on her Weibo whining about the ball change has made her "want to go on the offensive" after getting creamed by Ishikawa, who had a poor track record against choppers.
