These guys are running shops so needless to say, but they mostly focus on how T05 and T19 are different in feel. In the first video, the guy says T05 is more powerful when making your own shots whereas T19 is easier to spin when countering shots.

How does the rubber know it if is being used to "make your own shot" vs countering?

If T19 is less responsive in general and less reactive to incoming spin it would mean you would need to add more force on your own shots and it would mean that, with an incoming loop that is loaded, it would be easier to counterloop because the ball would not be as likely to jump off the racket out of control.

I don't know if that is what is being talked about. But, a rubber that is less responsive and less sensitive to incoming spin makes it so you don't need to be as precise with how you touch the ball to counterloop.

„easier to do own shots“ basically means „the ball coming to you is not a topspin and you are actively making the pace“ while „easier to counter“ means that „it’s easier to take the pace an spin of the opponent’s ball and bring it on the table“. For this, the rubber does not need to recognize what the ball coming is, it’s just the way a rubber reacts to incoming spin and speed...

What they say the difference is Zeio?

To keep it short, the difference only becomes discernible when hit hard. T19 has better grip when looping, and the sensation of bite is stronger.
