Density has nothing to do with it. The fastest paddle I have tried is a Joola R*1.

Notice the speed ratings and the comments.
It is made of thick balsa wood, 12mm. Balsa wood is not very dense which is why it is used to make model airplanes. I tried it for about 5 minutes then gave it back to its owner. It was too fast for me.
I doubt the owner ever used it in a real match. It seemed to be more like a novelty item.

Note, not all balsa wood is springy like in that in the R*1
