"Breaking out" against Defensive players

Hi,

I am a first division playing in local leagues in the North of England...I play a very attacking game, but struggle against defensive players.
The players just need to start pushing the ball, and I get into a very negative mindset and start pushing and pushing.
Eventually I start going for shots and make too many mistakes...I get to the win in the end...but its always a push and it ends up in a win in the 5th.

I work with a coach weekly who is helping with "breaking out" of the defensive mindset.
Does anybody have some solid tactics they use against defenders.
These are not pips players, just older players who push and chop.
