Having played a two Viscaria’s I would never describe them as weak or slow - you don’t say what weight your blades were but this may have contributed to the feeling?
mine are 88 & 91g are are both fairly quick powerful blades in my opinion.

I like C53 and it's similar to K3 but maybe feels slightly harder to me, I just seem to be more comfortable with K3 than either C53 or D09c. I could certainly use D09c with no issue but it's probably a bit more demanding than K3 feels.

Wow, that’s odd - no I don’t have any issues after having used it for 25+ hours including three consecutive 5h days. It looks and plays like new - I’ll certainly report back if anything changes.
I found my H8-80 (I have 37 and 38 deg) to be bouncier and faster on BH than H8. On FH H8 is more like an H3 and can generate more speed but feels slower and harder.
I’ve not played Bluegrip but have used D09c a fair bit - I’d say K3 feels softer (which I’m sure it is) and is just a bit easier to play than 09c and also C53 which I also like.
I play with a Viscaria and also have an Acoustic - I think you’ll find the Acoustic lacking in pace given what you’re used to and looking for. It certainly has control and feel though.
I'm also keen to try Viscaria Super ALC.
I find a hook serve much easier and more consistent, I can also place it more accurately and hide/vary the spin more so I tend towards this serve. Reverse pendulum has more spin and more potential for under in my experience if hit right.
