What causes this serve to bounce in different directions?

Hello,

In the video , you’ll see the serve bounce/spin in different directions.

But I’m not exactly sure why this happens and therefore how to improve.

In the first serve, I feel like I’m hitting to ball on section 3,1 of the racket.

In the second serve, I’m not sure, maybe I’m hitting the ball on section 3,4 of the racket.

Why does this serve bounce/spin in different directions and where should I contact the ball for maximum spin?

It doesn't matter where you hit it on the rubber apart from that further from the closest pivot is a faster speed and generally more spin/speed. What matters is what part of the ball you hit it on and what direction the swing is going.

The topspin is stronger than the sidespin on the second serve and hence overrides/dictates the overall direction after the second bounce.

first one is pretty much only sidespin, while second one is sidetop and it is not important where on the blade you hit it but rather the vector of movement of the blade at that time. Where you hit it can influence the amount of spin you generate but can not turn left sidespin to righ side spin or backspin to topspin.
For a hook serve like this this is nearly neglectable since the bat does move the same on any part of your playing surface. Where you hit it would be more important for a pendulum, where the tip of the bat can have much higher acceleration than the bottom close to the handle.
