Why do some players like Lin Shidong play their backhand topspin with the blade tip tilted upwards?
Fan zhendong blade Looks more parallel to the ground.
It really doesn't matter, all that matters is how they make their swing (using their arm and body) and contact with the ball based on the incoming ball spin and the shot they want to play. How closed or open or tilted etc. the racket looks can change based on so many things that it is IMHO not an important question. But maybe someone else will have a better answer for you.

EDIT: This video discusses forehand but the broad idea is the same - people focus on paddle angle mostly for the wrong reasons:
