Regarding OP question - on how blade influence shot/game play?

Well, it doesn't influence it. Blade only influence feel and control.
The shot/game play is from technique or the player using it.

Some will say, the more controlable blades = easier feel/control, will lead to better development of technique (with proper coaching), thus influencing better shot/game play.

Blades on its own won't do anything for you. You need all 3 (blade, coach, training/time)
But blade is the key to the equipment as that is the contact point (feeling) between the ball and you.

not to put you down but honestly if you can't play with t11 + h3/moon the problem is 100% in your technique, not in the equipment.
maybe it's just that you are used to premades and have a hard time moving to custom equipment.
h3 and moon are slow rubbers (slower than any european style rubber) and will bring any blade down to a controllable level.

Premades imo should be BANNED, it is totally different to proper table tennis equipment - espeically after few hours of usage or few days lying around. The rubber becomes silk and no different to anti.
Them you get players creating new technique to use with such equipment. 2 wrongs doesn't make a right, it makes wrong squared basically.

As a coach/shop, I never wanted to sell premades, but unfortunately due to some customers request and budget constraint, I am forced to import and sell some premades. But as a coach, I am totally against it - espeically young kids who start using it - it is us coaches "headache" to undo everything.

You don't see other "proper" sports, where you get such a big differences in social/school sport and club level equipment?
Soccer ball? Baseball bat? Tennis racket? Badminton racket? cricket bat? golf clubs?

TT is very different as the inferior product leads to an "incorrect technique"

I agree with you entirely that TT should be playing using custom equipments. But you should also realise that not everyone can afford to fork out hundreds of dollars on TT equipment especially in developing countries. I myself could afford to fork out around a hundred bucks for TT bat but not on something that I'm not sure I can play with and I don't have the opportunity to test out equipment before buying.

I got bad of with Stiga after buying some pre-mades (some years back). Therefore decided (later on) not to go at it anymore lol (despite knowing there were blades and rubbers way better than the once I had tried from Stiga), so I know slightly how you feel.
I would still recommend the W-6 ahead of both these. But up to you!

That's what I'm looking for, better feel with the ball. T-11 barely had any contact with the ball to let me feel that.

Though I agree that you play the equipment and not the other way around, switching from a premade bat to a Galaxy T11, which some members on tabletennisdb claim is even faster than Boll tricarbon is just way too much of a difference to be comfortable at first and requires good technique. My first blade was a Galaxy N10 with Palio Amigo and Joola Upp. 40 Euro All to All+ rated setup and it felt extremely strange for the first 2 weeks because I was so used to digging the ball up and not pushing the ball forward and down that a lot of technique had to be corrected. With that kind of setup, it was still manageable and easy to control and I could gradually start fixing technical problems.

Having a technique built on premade blade technology and switching to something like the T11 is not easy at all.

If you're willing to give Custom blades another try, I would recommend trying out the Stiga Allround Classic/Evolution/NCT (should be cheap) or the Donic Allplay series (Waldner, Appelgren, doesn't matter) or the Yasaka Allround or the Galaxy N10 if you have large hands because the handle is seriously humongous and pair it with Mark V/Sriver on both sides or a non-hard elastic allround rubber. I know a coach who plays in the first Bezirksklasse who said that people are better off starting with softer rubbers. His students start off with Sriver, move on to Sriver G3 FX and then go on to use either Bryce or Tenergy.

Planing on waiting on getting more rubber untill over new year... Because the amount you need to pay, before tax counts (in Norway) will be raised from 200 to 500 NOK (about 30 usd - 75 usd) which will be enough for me to order one rubber without having to pay tax, genius.

And the pre-made vs custom case. I believe custom is in most cases cheaper compared to quality. (apart from possibly dhs lol)
The reason most peoples buy pre-mades (from what I've seen) is because they simply can't go through the trouble of getting glue etc. and put it together themselves. Lazy folks.
For example the Yasaka Mark v ma lin carbon pre made racket I bought. (the first racket I was truly satisfied with) I got for about 110 usd (without shipping and tax) the same setup could be gotten in custom (buying blades and rubbers separate) for about 70 usd. so lolz.

Custom might be cheaper only if you get the right setup, but if you choose wrongly you'll need to change setup faster than with a pre-made bat which cost $15

True dat, though, if a reputable store don't have the desired blade, ebay would be the place. (as it has everything).
tabletennis11 does for example not have Galaxy W-6. (or any Yinhe product) Megaspin had it, but out of stock.

That's almost the one I bought. Though I got the Carbon version. (slightly diff)

This is a Mark V blade with Mark V rubbers - a premade

I would highly recommend against it, as loost items quality control is better (from my personal experience)

Classic All to All+ 5 ply blade. Get it in Flair handle unless you are a twiddler. I have bought blades from Stiga, Donic and Galaxy and the Donic blade had the best finish and the most comfy feeling handle. Too bad I didn't know any better and bought it in Straight because I thought that it would be a good idea.

I have used this rubber and this is probably the best cost/performance FH rubber that I have seen. Low throw angle makes it very good for short play and for learning proper forehabd tecnique. Very spinny for serves and has a medium sponge. It's a bit of a mix between a chinese and european rubber. It's cheap enough for you to test. The low throw angle may take some getting used to but it's great for correcting your stroke if you don't bend down enough. I could create ungodly amounts of spin for serves with this rubber with the slightest of movements.

Stiga Mendo. Supposed to be similar to Mark V but cheaper. Mark V is incredibly awesome on BH. Even Ma Lin used Mark V on BH until the speed glue ban.
