I have been training a very similar serve with side and under spin and was never happy about having to hit the ball quite high. I am happy now.......................but nowhere near as good as Yan An. :)

very subtle - for topspin he contacts more to the back of the ball meaning late timing while underspin is early contact to brush the bottom of the ball, given the vertical drop
Yes, and even with sidetopspin he shows the flatter racket angle first before changing it subtly to contact the back of the ball. Yikes!
