Are the difference in hardness between 40 and 41 degrees big? What are the differences in characteristics? Both are 2.15 mm thickness

usually 40 degree with 2.1 mm is enough for most people. Unless you have a really good FH, I don't recommend higher degree even with boosting

The average difference is about 1 degree. Sponge hardness varies from batch to batch and quality control especially with provincial rubber is not close to perfect, so the actual difference can vary from nothing to a lot. As to what 1 degree of difference means, 41 degrees tends to be a little harder and heavier, so more difficult to generate spin and speed but with a higher top end. Other characteristics depend on the player, the blade, and the booster, i.e., you'll have to find out for yourself.
