This is why you're disallowed to keep the ball shielded from reseiver's sight. Take the service rule seriously. Fair play first.
The server is not shielding the ball from the receiver's sight. It is the server spinning the ball using his fingers and throw it into the paddle that caused the extreme amount of unexpected and unforeseen spin on the ball.

I played in the 1990's where servers were allowed to shield the ball from the receiver's sight and people still played fine, for the most part.
