What blade would you recommend for someone stepping down from carbon?

I had a YEO two years ago and got to try one recently, it's just too hard for me, I can't feel much of the flex feeling that I like.
YEO actually has a lot of flex -- more than pretty much any other blade I've tried. What you may not like is that it's very hard.
My only fear of getting a 7-ply blade is to be too hard. I think I really like the flex feeling and I don't think something like the Koki Niwa or the Clipper will be that good for. Tbh, I may be wrong on that take, but I don't know anyone here with a spare 7-ply blade to lend me.
There is a distinction to be made between hardness and stiffness. YEO is very hard but not stiff, and Clipper is very stiff (doesn't flex) but not hard (the surface is very soft)

not stiff = more 'dwell' time
soft (trampoline) = more bounce
is that the experience with these terms?

oh... personally interested with this blade, if it is the same as force pro special edition - since both blades as I reckon are a stepdown from sfpbe

It is very close to the Force Pro Special according to https://ttgearlab.com/2020/12/30/tibhar-bernadette-szocs-signature-1-overview-lab-test/
Maybe a bit thinner on average.

YEO likes to be hit hard and becomes more flexible after some time ;) Maybe try/select a lighter/thinner one.

The Yasaka Ma Lin Extra Offensive. Walnut, spruce, ayous, spruce, walnut.
Slower: Stiga Intensity NCT

OSP Virtuoso OFF-, it is quite a bit more expensive than your YEO or Stratus PowerWood. I can also recommend Xiom Calderano SAL, quite underrated blade with enough power and still great feeling.
The virtuoso would be great, but having 92% of taxes over the final prices is quite wild. That would make the blade cost more than $200

Well, after practicing for the last year with my current coach, we've decided that the best option for me was slowing down the blade while maintaining my rubbers (k3 and c55).

After some discussion, we agreed that both 5 and 7-ply blades would be better than my current Hayata H2, but I fear the speed of an 7-ply blade would still be too fast for me.

That said, I've test blades like the clipper but every time I got my hands on one, one of the sides was long pips, so I couldn't really try it out; besides that, I've also tried blades like the Acoustic and the Korbel and, between those, I prefer the later since the handle of the acoustic is too thin for me.

If the Korbel was a bit cheaper, it would be a no brainer, but here in Brazil it's kinda expensive with the price floating around the $120 mark. Because of that, I would like to hear what blades would you suggest me to try it out.
No need to step down, there is Donic Appelgren WC 89 and Nittaku S-CZ almost identical and really good feeling. Both slow outers, great blades…

Yasaka Extra Offensive, used by Ma Lin and subsequently known as Ma Lin Extra Offensive. It's the best available blade for penholders, in my opinion.

Ma Lin Soft Carbon is fine. My brother has one and he let me use it. Not a bad blade but it's completely different from the Ma Lin Extra Offensive. Softer and stiffer, and different types of wood. It doesn't really feel like a carbon blade.

why do you think so? Yesterday I've tried using an joola classic all and the speed and feeling was pretty good. It may not be enough for the high level, but I'm still improving my rate and game, so I don't know if what I'm missing is speed...
