For those of us who've never had the privilege of visiting either country, where would you recommend us to go? Any "If you only visit once, be sure to go here" places? Any weird/unique foods or drinks to try?

Some nice ideas already, if i could suggest a route traveling from Düsseldorf i would head south along the Rhein river, first stop Cologne for the Kölner Dom. Then there's Bonn the old German capital, not a must but if you're into HARIBO they're from here and have a nice factory store with way more products than you've probably seen before.

Further south you will find many cute towns in beautiful landscapes and countless castles along the river. You'd also be entering Germany's wine region at a great time of the year, wine harvest, street wine festivals etc.

In Koblenz the Mosel meets the Rhein and the detour of the Mosel to Trier is gorgeous as well. Along the Rhine here begins the Upper Middle Rhine Valley (UNESCO World Heritage Site, outlined on the map i linked) stretching until Bingen. If you have time to go further there's Mainz and especially Heidelberg that i'd recommend.

I'm not a fan of tourist attractions but we have quite a variety of options.
Rotterdam for the harbour area and a lot of post-war architecture.
Den Haag for historic art museums and buildings, and the shore (although you can take a direct metro onto the beach from Rotterdam)
For the windmill experience, Kinderdijk is a top tourist attraction but you can find them in many cities on the west side, including operational ones.
Delft is pure history, including the beginnings of the current Netherlands and the famous Delft blue ceramics.
Amsterdam... Well the opinions are divided. I don't care much for it and you can find canals in Delft and Utrecht, even in Rotterdam and Den Haag. It's said there are more tourists than inhabitants in Amsterdam, and of those living there the majority isn't born in Amsterdam. So how authentic is it then?
Utrecht is as said a smaller, more quaint city than Amsterdam. I love the restaurants on canal level and there's good shopping options.

That's pretty much the major western cities. There is a lot to be experienced further in the country, for example the Veluwe and Utrechtse Heuvelrug are beautiful pieces of nature. If you like theme parks and fairy tales, de Efteling is a great experience. I could probably go on for a bit, but if you have specific interests I can help.
