What’s the difference in build and performance between these two as they seem relatively similar.

Head size is the main difference. The df has a 154 x 162 mm headsize and is therefore slower and meant for def players to have lots of control. The regular 7p-2a ia an off blade with a more or less standard head size (Darker blades that are not penhold or def blades have a headsize of 151 x 156 mm).
